If you’ve ever experienced a sub-par cup of coffee, the most likely culprit is water that wasn’t precisely the right temperature. Right now, unless you’re a total expert, you’re probably wondering what that is, so we’ll drop the suspense and tell you. To get the absolute maximum quality from every cup of coffee you make, you need that water heated to precisely 96 degrees. Note that this is nowhere near 100 degrees. It’s not even 95 degrees or 97 degrees, but precisely 96 degrees (or 205 degrees if you’re still mucking about with Fahrenheit like a dinosaur).
Now, it goes without saying it would be the height of madness to actually drink coffee at that temperature. You need to let it cool down a bit before you take that majestic first sip. In fact, you should let it cool down quite a lot and for a very good reason. If you slurp your coffee at anything higher than 65 degrees, the chances are you are not even going to really taste it properly. The heat just overpowers the taste, burning your tongue and cooking your gizzards. Avoid both of those inconveniences by enjoying your coffee at a crispy 54 degrees or lower (but anything less than 48 degrees and your coffee will start being too cold, and can develop stale notes as the flavonoids start oxidizing).
